What’s special about making potatoes in the air fryer

If you’ve already discovered that air fryer is THE perfect device for roasting veggies, you probably used it for some kind of roasted potatoes. I love this cooking method for these air fried red potatoes but also whole baby potatoes, low-fat French fries, potato wedges, you name it. They always come out perfect and take half of the time the oven would take.

These potato slices in the air fryer are no different. The slice provides a nice large surface for crisping up so the result is deliciously crispy outside and creamy, fluffy inside. They should not be mistaken for homemade potato chips though. Crispy, yes, but NOT crunchy.

We’re talking fork tender potato that can be enjoyed both as an appetizer dipped in something creamy and as a creative side for meat or fish.

Ingredient notes

Air Fryer Sliced Potatoes (2)
  • Potatoes: russet or Yukon Gold potatoes will work best for this recipe. Make sure your potatoes are similarly sized so that the slices are uniform and take similar time to cook.
  • Olive Oil: to help potatoes crisp up. I used extra virgin olive oil. Avocado or other plant oil will also work.
  • Paprika: I like Hungarian paprika for its vibrant color and flavor
  • Salt: I like coarser salt for this recipe, such as kosher or sea salt
  • Garlic & Onion Powder: to season the potatoes

How to make sliced potatoes in the air fryer

STEP 1: Slice. Peel the potatoes and slice them ¼ inch thick. You can use a sharp knife or a mandolin, which will give you evenly thick slices.

STEP 2: Soak potato slices. This step washes out some of the starch results in crispy potatoes after air frying.

STEP 3: Season. Add oil, salt, paprika, onion and garlic powder to the potatoes and mix to coat. Now your potato slices are ready for cooking.

STEP 4: Air fry. Place half of the slices on the bottom of a large basket-style air fryer. Some overlap is ok but generally you want one layer. Air fry at 380 degrees Fahrenheit until crispy on the outside and soft and fluffy on the inside. Shake the basket every 5 minutes or so. Check for doneness after 10 minutes and keep going until your potato slices are golden and crisped up.

STEP 5: Repeat with the other half of potato slices.

STEP 6: Serve immediately on its own or with your favorite dipping sauce.

How long does it take to air fry potato slices?

This will depend on how thick your potato slices are, what kind of air fryer you use and whether you preheat the air fryer it or not.

I tested air frying potato slices at different temperatures and found that at 360 degrees they were not browning fast enough, whereas at 400 degrees they were getting too brown but still slightly raw inside. For my 7-qt GoWise air fryer, 380 degrees is the perfect temperature.

I like my potato slices ¼ inch thick which makes them wonderfully crispy outside but still creamy and soft inside. For this thickness it takes about 12-15 minutes to air fry the slices. If your slices are thicker, go with 15-18 minutes. Anything thinner than ¼ inch thick will take 10-12 minutes or less.

I don’t usually preheat my air fryer, but if you do, it may shorten the air frying time by a minute or two. Either way, shake the basket after 5 minutes and then again at 10 minutes. At this point just keep checking with a fork so that your potato slices are as crispy and browned as you like them.

How to serve air fryer sliced potatoes

These potato slices work REALLY well as finger food at parties, game night or family gatherings. They go really well with something simple, like chip dip, ketchup or plain mayo. If you want to elevate them to a whole new level, try them with this easy and delicious dill aioli (that’s the dip in my photos).

The only downside to making these as a snack or appetizer is that you can only fit so many in the air fryer, so you’ll end up cooking multiple batches, unless you have 2 or more air fryers.

You can also serve these potato slices as a side for any protein. Try them with these Brined Chicken Wings, Buffalo Chicken Thighs or Pork Kebabs. Add a simple green salad or my Greek Chickpea Salad and you have a perfect, no fuss dinner on the table.

Storage suggestions

Air Fryer Sliced Potatoes are best freshly made so I don’t recommend cooking them ahead of time. However, you can slice, soak and season potato slices hours before your dinner or party and throw them in the air fryer while enjoying a beer or a glass of wine.

In the unlikely case that you end up with leftovers, store them in an airtight container in the fridge for up to 4 days.

Reheating instructions

  • Air Fryer: to reheat, place potato slices in the air fryer and air fry for 3-5 minutes until warmed through. Don’t air fry for too long or they’ll become too dry.
  • Oven: place potato slices in a single layer on a baking tray and reheat in the oven preheated to 375 degrees Fahrenheit for 5-10 minutes. Check after 5 minutes and don’t let the slices turn into dry potato chips.
  • Microwave: I don’t recommend reheating these slices in the microwave because they will lose their crispy outside completely.

Seasoning variations

I season my potato slices with salt, paprika, onion powder and garlic powder. This produces tasty, mildly seasoned potatoes that are perfect for everyone, including kids who don’t like visible green or black specks on their food. If you have little kids, you know what I’m talking about.

Honestly, you can season your potato slices with whatever you like to make them your own. Here are some spices that will work well for this recipe:

  • Black pepper
  • Dried herbs such as rosemary, thyme, oregano, basil or Italian seasoning
  • Herbs de Provence
  • Cajun seasoning
  • Chili powder or taco seasoning
  • Smoked paprika
  • Garlic or onion salt
  • Ground cumin and coriander
  • Your favorite seasoning blend that you put on meat, fish etc.

Recipe FAQs

What’s the best kind of potatoes to use?

Any potato will work but Russet potatoes and Yukon Golds work the best. Russets are higher in starch and crisp up easily, which makes them perfect for crispy fries or home fries. Yukon Golds are medium starch, creamier and great for roasting or soups. Slices made with Russets will be a bit fluffier on the inside but personally, I like the creaminess of Yukon Golds better in this recipe.

Can I skip the soaking?

You can but if you have extra 15 minutes, give the soak bath a try. You will love the crispiness that comes from this extra step.

Which air fryer to choose?

A large basket-style air fryer will work best. My personal favorite is an 7-quart Go Wise air fryer. If your air fryer is smaller you can still make this recipe but you’ll need to air fry the potatoes in more batches.

Can I make these with sweet potatoes?

Yes, absolutely!

Do I need to pre-heat the air fryer?

You don’t need to and I usually don’t. Basket air fryers work really well, no matter if you preheat it or not. If you do preheat it, check the slices after 10 minutes as it will likely take a bit shorter, although it depends on the type of your air fryer.

A large basket style air fryer (7-quart or larger) will work best.

Russet or Yukon Gold potatoes are the best potato type for this recipe.

Don't skip soaking the potatoes in water before air frying if you want crispy slices.
