You may have grown up eating toad in a hole. And essentially, we’re making avocado egg in a hole. But instead of the bread, we’re using avocados. (For an avocado-free version, try oven baked eggs or cloud eggs instead!)

How To MakeBaked Avocado Eggs

These baked egg avocado boats are a simple meal that’s packed with nutrition and easy to prepare — much like BLT stuffed avocados let me show you how to bake an egg in avocado:

  • Wash and cut the avocados. Slice avocados in half, remove the pit, and scoop out some of the avocado flesh so you can fit an egg into the well. (Snack on any extra avocado!)

  • Carefully crack the eggs into the avocado wells. You want to be careful to not break the yolk.
  • Season avocados and egg. Sprinkle theegg stuffed avocado with salt and pepper.
  • Bake the avocados. First you’ll bake for 7 minutes, then top theegg cooked in avocado with a sprinkle of cheese. (This is a baked avocado with cheese, after all.) Bake again according to how well done you want your eggs. See timing range below.

  • Sprinkle with chives and red bell pepper. These garnishes add a touch of flavor, color, and crunch!

Tips for Making Baked Avocado Egg Boats

While thisbaked avocado and egg recipe is simple, I do have a few tips:

  • Lean the avocados against each other or the edges of the baking dish so that they are upright and the yolk doesn’t leak out. You may want to use a smaller baking dish if you aren’t making the full recipe.
  • Don’t worry if some of the white spills over. If you really want to avoid it, you can place the avocado half in a small bowl, crack the egg into it, and then move the avocado to the baking dish, leaving behind any excess egg white in the bowl.

  1. Preheat the oven to 400 degrees F (204 degrees C).

  2. Cut the avocados in half and remove the pits. Spoon 1.5-2 tablespoons (21-28 g) of avocado flesh out of the center, so that you have a well large enough to fit an egg. (The well needs to fit about 3 tablespoons (42 g) total.)

  3. Place the avocado halves cut side up onto a baking dish. Crack an egg into the center of each, being careful not to break the yolk.

  4. Sprinkle with sea salt and black pepper.

  5. Bake for 7 minutes. Sprinkle shredded cheese on top. Bake for 5-10 more minutes, until the eggs reach your desired doneness:

    * Additional 5-6 min - Soft boiled
    * Additional 7-8 min - Medium
    * Additional 9-10 min - Hard boiled

  6. Sprinkle with chives and diced bell peppers for serving.
