Clean chocolate mousse recipe (1)Tofu is a staple in my cupboard. I love making stir fries, stews, curries, scrambled tofu, adding it to smoothies or like today, making it into a clean chocolate mousse made with silken tofu. No avocado, no dairy, no eggs, just pure plant based goodness.

Clean chocolate mousse recipe (2)Before we get to the recipe please let me tell you a bit about tofu and why I like it so much. Tofu, made from curdled soya beans, is packed with many nutrients including vitamin B, calcium and iron. It is a complete source of protein containing all 8 essential amino acids, low in saturated fat, low in calories, easy on the digestive system and cholesterol free. It is rather bland and hasn't got much taste on its own, but that's the beauty of it, because you can literately do anything with it.There are 3 different types of tofu.

Clean chocolate mousse recipe (3)Silken tofu, also knows as Japanese style tofu, is the smoothest tofu of all, it has the highest water content and custard like texture. When blended it goes creamy and soft, so perfect for smoothies, salad dressings or desserts like my clean chocolate mousse recipe which I am sharing with you today. Don't look for it in the supermarket fridges, it comes in a carton, so can sit on the shelves, usually in the world food aisle.

Clean chocolate mousse recipe (4)Another type of tofu is firm tofu, which is similar to the silken tofu, but a bit more firmer, so perfect for scrambled eggs. Last but not least is extra firm tofu, which holds its shape very well and is easy to slice, so think marinated tofu stir fry. It can be pan-friend, braised or stir fried . This one packs the most protein and is the most satisfying!

Clean chocolate mousse

Guilt free, easy, delicious and clean chocolate mousse recipe made with only 3 ingredients minus dairy, refined sugar, avocado or eggs.

Ingredients

  • 1 silken tofu
  • 1 - 2 tablespoon date syrup (depends on your sweet tooth)
  • 3 - 4 tablespoon cacao (depends how chocolatey you like it)

Instructions

  1. Blend all the ingredients in your blender or food processor.
  2. Spoon the mousse into serving dishes, cover and pop in the fridge to set for an hour
  3. Don't forget to decorate with your favourite fresh fruits, nuts and seeds

        Thanks for replying! I have maple syrup so I'm going to try this tomorrow. I made your flapjacks at the weekend, they only lasted 2 days, they were so yummy my husband ate 3 in one go!
