Ingredients used to make Greek Yogurt PB Fit Protein Bars

**I've linked some of these ingredients to amazon.com to give you an idea of what they are, but you should also be able to find them in your local grocery store (usually, the natural & organic food section).   • Protein Powder– My go-to protein powder is a vanilla plant-basedprotein powder, like this Orgain Protein Powder.
    • Notes on using other Protein Powders in this recipe: Most frothy protein-shake type powders like whey, casein, pea, hemp, brown rice, egg protein powders should give you similar results, but slightly different textures. (Whey tends to produce gummier protein bars, for example). Collagen Peptides protein powder DOES NOT work with this recipe, so I highly recommend that you stick with the recommended protein powders.   • Peanut Butter Powder - PB powder is made by removing most of the oil from roasted peanuts and grinding them into a fine powder, resulting in a low-fat, high-protein alternative to traditional peanut butter. You can use brands like PB Fit, or PB2. I used a Sugar Free PB FIt powder for this recipe

  • Greek Yogurt (or yogurt of choice) - Greek yogurt acts like a binder for this protein bar recipe and adds a hefty boost of protein, too! If you'd like to convert this recipe to a vegan-friendly one, you can simply use a vegan yogurt like coconut yogurt or almond milk yogurt. Note that you may need to add 1-2 Tbsp more of the peanut butter powder to make the protein bars since vegan yogurts are more watery compared to Greek yogurt.
  • Chocolate Chips - you can use any chocolate chips. To make these protein bars low-carb, use a lower sugar, stevia-sweetened brand

In a clean bowl, mix the dry ingredients: protein powder and powdered peanut butter powder (such as PB Fit or PB2)

Next, add in the Greek yogurt, using your hands to knead and get the dough to combine together.

NOTE: Add more peanut butter powder if the dough is too soft, add more of Greek yogurt if the dough is too thick. TRY TO ADD A HALF-TABLESPOON AT A TIME! The final dough should be firm, but soft enough that you can roll the dough into a ball without it falling apart.

Shape the protein dough into a rectangular mound, then wrap in plastic wrap or an airtight container lined with parchment, and let the dough set in the freezer for at least 30 minutes.

Recipe Variations and Optional Add Ins:

  • Feel free to experiment with natural flavoring / extracts. Add a teaspoon of vanilla extract (I didn't feel like it was essential so I left it out in this recipe), or other flavorings or extracts, such as lemon extract or raspberry extract

Just keep in mind that some extracts contain alcohol, and since this is a no-bake recipe, the alcohol won't have a chance to fully evaporate. If serving this to kids, or if you're sensitive to alcohol, be sure to use non-alcoholic extracts or flavorings. How to Make this Healthier

  • Make this even healthier by adding a handful of nuts, seeds and old-fashioned oats to add texture and nutrition. Even better, add a tablespoon of ground flaxseed, hemp seeds, or chia seeds.

How to Store Greek Yogurt PB Fit Protein Bars

  • You can keep the protein bars out at room temperature for 1 day but for maximum freshness and best texture, it's best to store these protein bars covered in the fridge. They'll be fresh for up to 5-7 days.
  • These protein bars also freeze very well! Seal them inside an airtight container or Ziploc bag and freeze them in a single layer so that they don't stick together. I recommend double-bagging if you want to keep out the fridge smell. They can be frozen for up to 4 months.

  • Add the mini chocolate chips

  • Shape dough into a rectangular mound, then wrap in plastic wrap or an airtight container

  • Let the dough set in the freezer for at least 30 minutes.

  • Slice into 5-6 bars.

  • Enjoy!

Notes

*I used Orgain plant-based vanilla protein powder. Other protein powders also work but the amount of Greek yogurt may change. Whey protein powder worked, but the result was gummier.

      The almond milk was a typo! It's been fixed now, thanks so much for bringing this to my attention! Regarding using PB Fit and no Protein Powder, I would use 1 cup of PB Fit for every 1/2 cup of Greek yogurt. If you're interested in what that might look like, here's my PB Fit Greek Yogurt Easter Eggs recipe that uses just those 2 ingredients.

    I might be doing my math wrong, but when cut into 6 bars, each bar is around 175 calories, using the info from the link you provided and the amount.

      Yes, absolutely! But the protein bars will be less sweet - I would taste test the dough before shaping and add 1-2 Tbsp of sugar of granulated sweetener of choice. Enjoy!

    I ended up having to use a lot more Greek yogurt than 1/3 cup. The recipe as it is was very dry and crumbly. Eventually, I got a decent consistency, but it still seem to fall apart even after you freeze it overnight.

    The bars are tasty, but a little bit too dry. Feels like I need a glass of milk to drink this with.
