Fluffy, creamy corn casserole, rich delicious, and delicious a favorite of kids. This recipe is the perfect side dish a second favorite to the green bean casserole. Our family makes this cornbake casserole every Christmas and Thanksgiving dinner.

Corn baked casserole is the new side dish for our family starting around 1995 for our holiday dinners. When we have friends over for a weeknight dinner my best friends brings at least once or twice a year.

Green bean casserole is a holiday favorite side dish. A Jiffy cornbread mix corn casserole is now starting to be a classic side dish. And now is becoming a perfect non-holiday side dish for any large get-together. It is the best thing to bring when you have to feed a lot of people link a potluck dinner.

Family Traditions for Thanksgiving

When I was a little girl, we went to my Aunt Lois’s house almost every Thanksgiving. My grandmother, my mother’s mother, lived with Aunt Lois so it was a natural trip to visit my grandmother and see my mother’s sister. As my Uncle Louis wasn’t fond of turkey, we always had a ham for dinner. It was traditional to have two main dishes at Aunt Lois’s home.

In the ’50s and ’60s, it was traditional for the first Christmas TV shows to start after Thanksgiving dinner. My Dad would always make sure we were home in time to watch The first Christmas variety show and the first Christmas cartoons. My favorite was Charlie Brown’s Christmas.

When I was a child, our family started the day after Thanksgiving the mad rush to get all the Christmas decorations sorted and decorated around the house. After years of work wenow have more vacation andalmost always take Monday off also so that we can get as much done as possible this first weekend.

Tips for a Successful Tasty Side Dish

The trick to having a successful and fun Thanksgiving and Christmas dinner for the host is to start side dishes like this the day before. This easy corn casserole recipe is a great recipe for make-ahead preparation.

Purchase all your ingredientsthe weekend before as they have a long shelf life. Thawthe frozen corn the night before or when you mix the recipe it freezes up (believe me I have done this). Mix all the ingredients together in your favorite casserole dish, cover with foil or plastic wrap, and refrigerate overnight.

An hour and a half before you want to eat take off the cover and put in the oven at 350° for 90 minutes. Check the top to ensure the middle is cooked depending on your oven and how many other cold dishes are in the oven simultaneously. If this dish is alone in the oven take 60 minutes.

  3. Mix all the dry ingredients, canned corn, and jiffy cornbread mix in a large mixing bowl. Add all of the wet ingredients, creamed corn, egg, sour cream, and thawed corn together. put in your favorite casserole dish, cover with aluminum foil or plastic wrap, and refrigerate overnight.
  4. If you are making it right away drizzle the melted butter on the top of the casserole and cover it with foil.
  5. Remove the casserole from the refrigerator and set out to get to room temperature. An hour and a half before you want to eat take off the cover and put in the oven at 350° for 60 to 90 minutes.
